In the Kitchen: Mushrooms con Chipotle

I will pause to note here that I am not a Vegan (or vegetarian). I flag these recipes as "Vegan friendly" for two reasons: One, to snare Vegans in my sinister trap, and two, to let other non-Vegans know what sorts of things will be suitable when cooking for Vegan guests and so forth. Despite the gaps between our chosen food philosophies, this is another recipe that shows that sometimes terms like "Vegan" are pure semantics. I wasn't trying to be all Vegan when I made this recipe, I just thought it looked good in the cookbook. Let us cast semantics aside and increase our repertoire of side dishes forthwith:

Mushrooms con Chipotle

Recipe adapted from Taste of Mexico by Elisabeth Lambert Ortiz.

    1 package (4 cups) button mushrooms
    4 Tbsp pure olive oil
    3 cloves garlic, chopped
    1 small onion, finely chopped
    2 drained canned chipotle chillies, rinsed and sliced (these are usually sold as "chipotles in adobo" in the Hispanic foods section)
    Chopped fresh cilantro, to garnish (optional)
    Kosher salt

(Serves 2-3, or use as part of a larger party spread if you can keep the dish warm.)

  1. We begin by wiping the mushrooms clean with a damp [cloth]. Trim the stems as desired (that's my personal neurosis) and set aside in a medium bowl.

  2. Peel and trim the garlic cloves, and cut into slices. Rock the knife over the slices and coarsely chop. Add the garlic to the bowl containing the mushrooms.

  3. Finely chop the onion and add to the bowl. See the link in the recipe list for instructions as needed.

  5. Pull 2 chipotle chillies from the can and rinse with cold water. Slice the chillies lengthwise and add to the bowl. (Seeds may be removed as desired, but the chillies are primarily meant for flavoring.)

  6. Heat the olive oil in a skillet or wok (wok is probably better - more stirring room and it gets hotter faster) over medium heat.

  7. Add the contents of the bowl to the skillet. Stir throughly to coat the mushrooms with the oil.

  8. Fry the ingredients for 6-8 minutes over medium heat, stirring often. When onions and mushrooms are tender, season with salt as desired and garnish with chopped cilantro (optional).
